A Chance Encounter in the Glow of Rabo di Galo
It started, as all great stories should, on a Monday night that had no business being that memorable.
I’d ducked into Rabo di Galo, the sultry cocktail bar inside the Rosewood São Paulo, for what I told myself would be one quick drink before dinner. The kind of drink you swish contemplatively, nod politely, and exit gracefully from.
Instead, I walked into something closer to a fever dream.
A live bossa nova trio was crooning from the corner, velvet and honey dripping from every note. The crowd—slick, stylish, and just the right amount of unbothered—was hypnotized. And behind the bar, bending the laws of liquid physics with a wink and a wrist-flick, was Gabriel Santana.
He wasn’t just bartending. He was performing. Not with ego, but with a kind of playful precision that made you want to lean in and figure out how the trick was done.
I had the drink. Then, reluctantly, answered the call of a dinner that had the misfortune of tearing me away mid-magic.
When I returned, the music had faded. The band was packing up. Most of the guests had paid their tabs and floated off into the São Paulo night. But there he was—Gabriel—still holding court with a few team members and the bar staff. I stayed. We poured another round. And then a few more. And somewhere in the low-lit magic of the night, a new friendship took root.

A São Paulo native with a global pedigree, Gabriel studied gastronomy at HOTEC and hospitality at the elite École Hôtelière de Genève in Switzerland. He’s worked behind bars from the Roosevelt Hotel in New Orleans to the Mandarin Oriental, collecting flavors, stories, and techniques along the way.
He’s taken home top honors in the World Class Competition, the Jägermeister Leman Bar Contest, and countless others—but perhaps his proudest moment came in April 2025, when Santana Bar was named one of the Top 10 Best International Cocktail Bars in Latin America & the Caribbean by the Spirited Awards®.
His cocktails whisper of old-world refinement and local rebellion. His approach is deeply intentional, shaped by both high-end hospitality and gritty barroom charm. Gabriel is a perfectionist with the heart of a storyteller—and in a city that doesn’t stop moving, he’s built a bar worth lingering in.
